Appetizers

A long time ago, a very dear friend, Jose Walter Valenzuela quoted:  "if the hostess serves too many appetizers, it is because she doesn't have enough food to serve".  So, you will see very few appetizer's ideas.

Cream Cheese Ball (my)

1 lb. cream cheese at room temperature
2 garlic cloves
1 teaspoon salt
black peppercorns crushed

place the cheese in a bowl, use a hand mixer and mix.
crush the garlic cloves; add the salt and make a paste.  add the garlic to the cheese and mix thoroughly.
place the cheese in a piece of plastic wrap; form a ball and refrigerate overnight.

before serving, roll the cheese in the crushed peppercorns.  serve with crackers.

Sausage Biscuits (Marci Harris)

3 cups bisquick
10 oz cheddar cheese, grated
1 lb. sausage

mix the cheese and sausage together.  add bisquick and work together well with hands like kneading bread. form small balls.  bake 325 about 20 minutes.  can be frozen and then cook.

Chili Cheese (Jane Miller) (this was a favorite at Colonel Miller's happy hours)

2 pounds of ground meat
2 pounds of velveeta cheese
1 small can of whole tomatoes
3 medium onions chopped
3 jalapenos chopped
2 teaspoons of salt
2 teaspoons of chili powder
1 teaspoon of garlic powder

use a tablespoon of olive oil and brown meat.  add the tomatoes, onion, salt, garlic and chili powder.  cook for 15 minutes.  cut cheese in pieces.  add cheese to meat.  let it cook for 30 minutes at very low heat, stirring once in a while.  serve with tortilla chips.
